I’m not mexican, but my granddaughter is. The only way I know how to commemorate it is with food. So, here you go. My photos for the day…
First up: Enchiladas
Then we have my classic spanish rice, a recipe handed down from my own grandmother (she was spanish, not mexican):
then we have a little dish I made from a recipe I found on the Pioneer Lady’s website, Huevos in a hole. This was rather tasty and a really fun version of egg nests, egg in a hole, or toad in a hole, depending on where you’re from. This used corn tortillas, with cheese and pico in between the layers before adding the egg in the middle:
And finally, Pico de Gallo, made with ingredients fresh from my own garden:
